Baked delica pumpkin flavored with herbs

Process

  1. Wash the pumpkin well, cut it in half and then divide it into wedges. It is not necessary to remove the peel and seeds as Delica is the anti-waste variety par excellence: not only the pulp of this pumpkin is consumed but also the peel, seeds, flowers and leaves.
  2. Line a baking tray with parchment paper, arrange the pumpkin wedges and proceed with the rest of the ingredients: put a couple of unpeeled garlic cloves, the sage leaves, the rosemary sprigs and the olives.
  3. Season with a drizzle of oil and a pinch of salt, cook in the oven at 180° for about 25 minutes or in any case until the pulp becomes soft.
  4. Remove from the oven and dress with Guerzoni Serie Argento balsamic vinegar of Modena, its intense taste goes perfectly with the sweetness of the pumpkin and its chestnut aftertaste.
